Week 14 - Easy Morning Glory Muffins

Baking is not my normal cup of tea. It involves precise measurements and science. Once in awhile I find an easy recipe that catches my eye. The problem is I just can't stick to a recipe. This particular one allowed me to add some extras to make it my own and to boost the health benefits. Online the basic recipe is 1 cake mix and a 15 oz can of pumpkin. That is it! It sounded a little too dense for me. Adding eggs helped to lighten it up some. And then I decided to add texture to turn this into a healthy breakfast feast! Be creative and add whatever you like! (nuts, dried fruits, berries, coconut.......)
Morning Glory muffins
1 Carrot cake or Spice cake mix
1 15 oz can of pumpkin

2 eggs
1/2 cup of nuts (or more!)
1 to 1 1/2 cup coconut
In a small bowl mix together the pumpkin and eggs. In a large bowl add the pumpkin mixture and all your fixings to the cake mix. Fold in.
Place into muffin tin and bake at 350 for approx 18 - 22 mins. Or until toothpick comes clean. The time of baking depends on how big your muffins are. So you may want to start checking at 15 minutes if you are't filling the tins very full.
