Frozen Vegetables for Soup
Frozen Vegetables for Soup

1 lb ground meat

1/2 package of frozen "Vegetables for Soup"

1/4 head chopped cabbage or a small bag of shredded cabbage (optional)

1 15 oz can diced tomatoes

1/2 cup tomato sauce

1 1/2 to 2 qts chicken or vegetable stock

salt & pepper


Fry ground meat with salt and pepper. Once meat has been cooked through add all the other ingredients. Bring to boil and cook at least 1 hour until vegetables are tender. Taste your stock to see if it needs anything. Chicken Stocks vary greatly. If you are starting with a weak stock you may want to add 1 tsp thyme or 1 tsp italian seasoning to your soup. And of course, more salt and pepper!


Ground sausage is a great option to add because it has so much flavor compared to other ground meats. It will a nice italian flavor to your stock.


Also, soup base is a great way to add depths of flavor to your soups. You can get them in the same aisle that your soup stocks are in. It is basically condensed stock. Let's face it. We all don't have time to make amazing bone broths. These do great if you do not have the time.
