Week 32 - Garden Fresh Summer squash and Zucchini over Pasta

Growing up in Michigan had its pro's and con's that is for sure. Some of my fondest memories in Michigan were the summer months. As a child, we would go out to the garden and gorge on what was available to eat. My sister and I would pick a tomato and wrap a paper towel around it and eat it like an apple.


The one thing that was always plentiful were zucchini. Zucchini are not usually a vegetable you just pick from the garden and eat. They also did not preserve well when canning. The problem was always what to do with them. We eventually had so much of it that we took the large ones, cut them lengthwise, seeded them, and floated them down the creek with our fisher price men in them. They make great boats. So when in doubt let your kids play with them!



We no longer have a garden on our property. But what we do have is our neighbor Jenny. She has a very large garden and supplies her neighbors lovingly with all kinds of fruits, vegetables, honey, and eggs.


On this episode you will see a simple dish I made up as I went along. Using the zucchini from Jenny's garden, and a few ingredients my mom needed to get rid of at her house.





Summer Squash, Zucchini and Pasta ala Michigan


2 summer squash

2 large zucchini



1 onion or 2 shallots

2 T Garlic

6 Pieces cooked bacon chopped

2 - 3 cups cherry tomatoes sliced in half

drizzle of Olive oil

salt & pepper to taste


Saute onion in medium high pan that you cooked bacon in. Drain the fat off the pan, leaving a little left for flavor. Add squash and olive oil once onions start to turn translucent. Do not over stir. We want the squash to brown. Add Garlic and toss.



Once the squash is slightly tender to the bite add the tomatoes. Stir gentle as we do not want tomatoes to break down. When squash is tender to the bite and tomatoes are warmed thru it can be served over pasta. Note....I seasoned my pasta with olive oil and salt first.


These veggies can also be served as a side dish without the pasta. They tasted amazing and fresh.


A very healthy,simple, and quick meal.
