Week 22 - Middle Eastern Feast

It sounds intimidating doesn't it? I thought so too. It isn't. I promise....
Most of what was made from scratch can be bought at the grocery store and still taste really good. The feast includes spicy ground lamb kabobs (kofta), hummus, naan bread, tzatziki, and cut up vegetables. Are all these items from the same region??? No, and I don't care. They go well together and my family loves it.
This meal can be made vegetarian by not including the meat. The hummus is so healthy and filling on its own that you don't even need the meat. Or you can use the spices that are on the meat and combine them with tofu, or a vegetarian fake meat product.
Do no skip the vegetables! They add so much to this dish.

Lamb Kofta (my way)
1 lb ground lamb
1 lb ground chicken (it is cheaper)
2 T ground coriander

2 teaspoons cumin
1 Tablespoon ground cinnamon
1 teaspoon ground all spice
1/2 teaspoon cayenne pepper
1/2 teaspoon ground ginger
1 Tablespoon of dried parsely (fresh is better but if you don't have it used dried)
1/2 grated or finely chopped onion
Mix all ingredients together. Make into patties and fry. Or you can use wooden skewers and form the meat around them. Grill the kabobs or broil them in your oven.
As for the other ingredients.....save yourself some precious time and buy them at the store. I won't be making hummus anytime soon. I will make the tzatziki again. It was easy and so tasty!!!
