Week 21 - Perfect Pasta Fagioli

Do you ever want to not have to think so much about what's for dinner? Do you wish your family would just stop eating all together? Well, this healthy meal is for you. It is made with leftovers and the family won't even know! It starts by making a big pot of spaghetti and enjoying a meal. Make sure you double the batch of the sauce because that is going to be the base of your next easy meal. Freeze the sauce until you want to make this delicious Italian soup......

This soup is so easy that you will laugh. Is it authentic pasta fagioli??? I don't know and I don't care. One day while playing around with leftovers I just came up with it. My family gobbles this up and yours will too!

The Recipe.....
8 cups red pasta sauce (however you make it)
6 cups stock
3 zucchini sliced and rough chopped (see video)
mushrooms sliced
1 1/2 cups matchstick carrots (or whatever you have)
1 - 2 T Italian seasoning
2 cans white beans
1 - 2 Tablespoons garlic
cooked pasta (tortellini worked great!)
Parmesan cheese for topping
Put all ingredients into a pot and bring to a boil. Let simmer at least 45 mins for veggies and seasonings to blend.
Taste soup occasionally to see if it needs salt or pepper. It matters how flavored your stock and red sauce were. Add more Italian seasoning if necessary.
To serve: put pasta in bowl, pour soup over them. Sprinkle with Parmesan cheese
