Week 12 - Quick Roasted Turkey Tenderloin w/ Roasted Veggies

Do you ever get groceries and then realize you are going out of town? Last week I was not thinking and bought a beautiful head of cauliflower and vibrant yellow summer squash. One goal I have is to never let anything go bad in my fridge. I happened to have pre-seasoned turkey tenderloin in the freezer. There you have it. A quick easy weeknight meal that took minutes to chop and throw in the oven.


Turkey tenderloin is a great low fat source of protein. If you buy it already seasoned you have a "no thinking" kind of meal. Use the left over meat for sandwiches and salads. You can use any type of vegetables to roast. All vegetables are game for roasting. Try them with basic olive oil, salt, pepper, and garlic powder. Then you can experiment with other seasonings like curry, cumin, chili powder, creole seasoning and whatever else you come up with. You can also dress your vegetables with fresh herbs like parsley, basil, or cilantro.
