Week 37 - Quick Stir Fried Rice (w/ leftovers)

Leftovers can get so boring. Eating the same meal twice in one week does not sound exciting. Instead of eating the same meal you can get creative and turn it into something completely different.


Watch this video to see how I took grilled chicken and turned it into a new exciting meal. No one will ever know that it was yesterdays chicken. I also served the chicken with grilled pineapple, brown rice, and soybeans. These items went into the stir fry as well.



Traditional stir fry has peas and carrots. I substituted the soybeans for peas and used shredded carrots to make the dish even easier. This is a quick dish that everyone will enjoy and it will take minimal effort. So next time you grill chicken and rice, double the batch and save some for another day during the week to serve it up Asian style.


This episode was taped to show my son going off to college how easy fried rice can be. He will not have some of these ingredients like sesame oil, and fresh ginger. This is ok! It will still taste good with soy sauce and garlic. But if you have the sesame oil and ginger then by all means add it.


I am not putting a written recipe. This is supposed to be easy. My new term....FREEDOM COOKING. Stop measuring everything! Some meals yes, but not all. Throw it together. Just try....
