Week 11 - Quick Tilapia and Super Greens

I always struggle with what to eat for lunch. It seems that I love spending time cooking for others, but when its me alone I tend to not want to. I decided that lunch needs to be viewed as a more important meal that nutrition needs to be squeezed into.


Frozen fish sounded like a healthy quick food that vegetables can be added to. And this could make an amazing meal. Super greens are always a healthy anti oxidant packed food that needs to be added to all our diets.




2 Frozen breaded Tilapia filets

1 15 oz can of diced tomatoes

1/4 onion sliced (optional)

1 teaspoon chopped garlic

1/3 cup coconut milk

4 handfuls greens

olive oil

salt & pepper


Heat olive oil and add tilapia. Add onions, salt, pepper, and garlic. Flip Fish after about 7 minutes or so. Add Tomatoes and coconut milk. Heat thru for a couple minutes. Add greens and toss till wilted.


Serve immediately
