Week 45 - Stuffed Acorn Squash

Fall is in the air and stuffed acorn squash will give you all the comfort you need on those cold days. This bakes for a good 45+ minutes so it will help heat your house too!
This dish uses store bought stuffing and tastes amazing. I tend to buy the stuffing that is in the bags over the box version. The reason you ask? Usually the boxed stuffing is a "just add water" type. The type in the bag calls for onion, celery, stock, and butter. Anytime you add onion and butter it is always better! The sausage also adds so much flavor. It permeates into the stuffing and flavors the whole dish!

Stuffed Acorn Squash
2 acorn squash cut in half and seeds scooped out
1 lb ground sausage (italian will work or just regular)
1 14 oz bag stuffing mix (cubes or cornbread type)

*all ingredients stuffing mix calls for (prepare as directed)
1 packet brown gravy or a different gravy (I have a love of cheap brown gravy)
1/2 cup pecans (optional, you could also use dried cranberries or raisins.
Saute Sausage, then prepare stuffing as directed in the pan the sausage is in. Stuff Acorn squash and bake at 400 for 45 minutes. Check your squash. If they are large squash they may take longer.
Cut halves in half, pour gravy over the top.
serves 4-6
(optional....you can use olive oil, salt, and pepper and season your squash before you stuff them for extra flavor)
