Week 51 - Swedish Meatballs

Every year on Christmas Eve we celebrate with a traditional Swedish Christmas. This means some interesting items are put on your plate. The most interesting is Lutfisk. I will not be making this dish because it reminds me of fish jello. Instead, Swedish meatballs are on the menu. They are absolutely amazing! And they are even more amazing if you eat them with a swede that you love.



Swedish Meatballs

1 T butter melted

1/2 large yellow or white onion grated or chopped fine (I use a food processor)

1/4 cup half & half or milk

2 cups cubed bread (bakery bread is best)

1 large egg beaten

3/4 lbs ground beef

1/2 lb ground pork

1 t salt

1 t pepper

1/2 t fresh nutmeg

1/2 t ground cardamom

1 t allspice


Tear bread into small pieces and pour half & half over bread. Let sit 20 minutes. Make sure to break up big pieces and crust after it soaks. (Optional...you can take crusts off bread as long as you have 2 cups)


Pour bread mixture on meat. Add all other ingredients into the bowl. Mix thoroughly.


Form into 1 1/2 inch balls and bake at 375 degrees for about 30 mins. Check a meatball to make sure it is cooked thru.


If you do not like really flavorful meatballs you can cut back half on all the spices. The white sauce also has allspice in it. This can be cut back too.

Swedish White Sauce

4 T Butter

4 T flour

2 cups milk

1 tsp salt

1/2 to 1 tsp allspice


Melt butter in sauce pan. Add flour and whisk together. Cook for about 1 minute to get rid of raw flour taste. Add 2 cups milk, salt, and allspice. Stir constantly and bring to boil. Sauce will thicken once it has boiled. Take off stove. Use half of sauce to cover meatballs when you put in crock pot. Use the remainder to drizzle over the meatballs on your plate.
