Week 16 - Swiss Chard Rolls With Sprouted Bread & Butter

Swiss Chard is new to my repertoire of ingredients. It does not have a strong "greens" flavor. This makes it easy to throw it into sauces and no one even notices. Today, I wanted to make something that actually showcased it. I let the bunch of chard sit in my fridge a couple days while pondering what to do with it. Then it came to me. Cabbage rolls. But instead of cabbage leaves I would use the Swiss chard leaves. The leaf is more delicate than cabbage leaves so you have to be careful when you roll them up.
I used ground turkey sausage as my meat choice. Next time I would use regular ground meat. Also, there was a Worcestershire sauce shortage in my house that day. The internet helped me out a little with a replacement of 6 drops Tabasco and a 1/4 t of sugar for every tablespoon of Worcestershire. I wasn't happy with the flavor this left the sauce. Steak sauce saved the day! I added 3 T to the tomato sauce and it really added a much needed tangy flavor.
Swiss Chard Rolls:
1 bunch Swiss Chard

1 lb Ground meat
1 egg
1 cup cooked rice
1/2 cup chopped red pepper (optional)
1/2 medium onion chopped fine
1 T fresh garlic
1 T powdered garlic (I ran out of fresh, just put some garlic in it)
1/2 t salt
1/4 t pepper
Sauce:
2 8 oz cans tomato sauce
2-3 T brown sugar (if you like food sweet use 3)
3 T Worcestershire (i used 18 drops Tabasco and 3 T steak sauce because I was out)
1/2 to 1 juice of lemon
Mix together ground meat, egg, rice, peppers, onion, garlic, and salt & pepper.
Cut the ribs out of the Swiss chard leaves being careful not to tear the leaves.
Mix together the sauce ingredients in a small bowl.
Scoop meat mixture into the leaves and roll them up. Place in 9 x 13 inch pan. If you have leftover meat just put it around the rolls.
Pour sauce over the rolls and bake at 350* for 30 - 45 mins.
Serving size 4
My family ate all of it. I can see how it could serve 6 people. Especially if you add a salad to it.
