Week 47 - T!tty Sauce Yams (candied sweet potatoes)

Are you looking for a sweet potato or yam side dish this holiday season? This recipe is quite different than the others. The sauce for this recipe is an old recipe used by wet nurses! They would put this sauce on themselves so unhealthy babies would suckle. They found that this sweet sauce was also very good with yams or sweet potatoes. Who knew?


It is from an old book my father gave me called "Bull Cook and Authentic recipes and practices. It has many delicious old world recipes from anywhere you can imagine. The recipe calls for almond and cherry extract. I could not find cherry extract. In the baking section of the craft store I found cherry flavor for candy making. This is 4 times as strong as extract but can also be used in baking. It worked great. I just cut back the amount and used 1/4 teaspoon.





T Sauce Yams (or sweet potatoes)


5 large sweet potatoes

1/2 cup water

1/4 cup honey

pads of butter

1 t almond extract

1 t cherry extract


Boil Yams in their "jackets" (skins) for 20 minutes, Place in baking dish and baked on 380 for 40 minutes. While Yams are baking make the sauce. Heat 1/2 cup of water until its "good and warm". Add 1/4 cup of honey to the water and stir until dissolved. Remove from heat. Add almond and cherry extract. Take Yams out of oven, remove skins. Spoon into bite size pieces. Pour Sauce over yams and add pads of butter. Serve immediately.
