Week 1.......Easy Chicken and Green Bean Stir Fry

I was talking with a friend of mine that said she would have no idea what to do with a fresh green bean. Today, she will find out 2 ways to eat fresh green beans.
3 Chicken breasts
2 T crushed garlic (or 2 t powdered)
1 cup soy sauce
1 T Ginger
2 t cornstarch
1 T Vinegar
1 lb fresh green beans
1 colored pepper sliced
1 onion sliced
3-5 T sweetener (honey, sugar, brown sugar)
2 T vegetable oil (optional)
cooked rice (optional)
Serves 4
Cube chicken breasts and season with 1 T Fresh garlic (or 1 t powdered), salt and pepper, set aside to marinate.
Teriyaki Sauce:
Add 1 Tablespoon fresh garlic (or 1 t powdered), 1 T fresh ginger (or 1/2 to 1 t powdered), 1 T vinegar, and sweetener (1 tablespoon at a time until it tastes to your likeness) to the 1 cup soy sauce. Set aside for flavors to blend. Add more sweetener if necessary. It's up to you and your taste buds. (or buys store bought teriyaki) Also, you can always add more garlic and ginger.
Add corn starch to chicken
Cook chicken on medium high heat making sure not to crowd the chicken. (The chicken may not brown well if you just throw it all in the pan. The temperature of the pan decreases when you add something to it. This will then cause you chicken to poach or steam in the pan and you will not get the browning that not only looks good but also tastes real yummy.) You may have to cook it in 2 rounds in your skillet. It is worth it!!!
Once chicken is browned remove and set aside.
Add onions, peppers, and greens beans to the medium high skillet. Stir regularly. If you do not like green beans crunchy add them first for approx 3-4 minutes, then add your onion and pepper. Remember this is stir fry it should not overcook. Once vegetables are almost done to your liking add the chicken and 1/2 of the teriyaki sauce. Heat through and serve immediately alone or with rice.
Serve with sriracha, chili garlic sauce, and or the remaining teryaki sauce.

If you omit the oil, and use 5 T of sweetener in teriyaki sauce......2 SP
.....add 1/2 cup of rice....4 SP total.....
