Week 9 - Fresh Shrimp Ceviche and Homemade Tortillas

I lived in San Diego with my husband and boys for 6 years. We loved the food. Home of homemade tortillas, Baja Fish tacos, Burritos the size of a football and great surfing. I bought fresh corn tortillas at the market (still warm) and was inspired to make Ceviche with Fresh Tortilla Chips





1 lb peeled and de-veined shrimp

1 cup fresh citrus (1/2 lemon and 1/2 lime)


1/4 large red onion

jalapeno (to taste)

1/4 cup cilantro

6 mini colored pepper or 1 red pepper

1 large tomato

2 avocados


Chop shrimp into 1/4 - 1/2 inch pieces. Add 1 cup fresh citrus juice, onion, jalapeno, peppers and cilantro. (I bought 3 lemons and 3 limes. It wasn't enough so I added store bought lemon juice to make up for the difference) Cover and refrigerate 6 - 24 hours. (I let mine go 24 hours)


Add tomato and avocado. Serve with homemade tortilla chips or store bought. Beer tastes really good with this!!
